CULLEN SKINK.

2 large smoked Haddock fillets.
1 chopped onion
1 chopped leek.
1 bay leaf
1 pint milk
800g. mashed potatoes
½ pint cream
Chopped parsley for garnish
Salt & pepper

Place the haddock, onion, leek and bay leaf in a heavy saucepan and cover with the milk.

Bring to a boil and cook for 25 mins. until the veg is soft and haddock breaks easily into pieces.
Season with salt and pepper.
Add the mashed potato and cream.
Mix thoroughly and serve garnished with the parsley.
Serve immediately.
