Apple
Gingerbread.
½ lb cooking apples.
Sugar to taste
3 oz demerara sugar
¼ lb golden syrup
3 oz. butter
6 oz. self raising flour
1 tsp. ground ginger
¼ tsp. ground cloves
1 egg
Oven – 350 degrees.
Grease an 8” x 6” baking tin. Peel, core and slice the apples. Put in a pan with a little water and sugar to taste. Stew gently until tender and than mash and cool. In a separate pan, melt the syrup, butter and demerara sugar until dissolved. Leave to cool. Sift the flour, ginger and cloves into a bowl and make a well in the center. Add the egg to the syrup mixture and then mix into the flour. Stir in the mashed apples and mix well. Turn into the pan and cook for 30 mins, until firm.
Leave in pan for a few minutes before turning onto a wire rack to cool.
