Cauliflower Cheese & Whisky

Ingredients

1 Medium Cauliflower
6 ozs. finely chopped mushrooms.
½ finely chopped green pepper
10 ozs. Double Cream
4 ozs. grated cheese – Use cheese with a good flavour
3 ozs. Scotch Whisky
1 oz. oatmeal
Pinch nutmeg
Salt & Pepper to taste
2 ozs. chopped nuts.

Method:

Remove the cauliflower stalks and cook the florets in hot water for 5 minutes. Drain and put into an ovenproof dish with the chopped mushrooms and green peppers mixed in.Heat the cream gently in a small pan, add the cheese, stirring frequently.When cheese has melted, remove from the heat and mix in the whisky and oatmeal.Add salt, pepper and nutmeg.  Pour over cauliflower and sprinkle the chopped nuts on top.

Bake in a preheated oven at 350% for 45 minutes. Serve immediately.
