Highland Oatcakes
1/2 cup Oatmeal
1/4 oz. Butter
Pinch Baking Soda
Pinch Salt
Water to mix.
Place oatmeal in a bowl and make a well in the center. Melt the fat in boiling water (3 Tablespoons) and then pour into oatmeal and mix to a stiff dough.
Roll dough out on a floured board, Roll into a round about 1.8" thick. Cut in farls (quarters) and bake slowly on a griddle until they harden and the corners turn up at the edges.
To serve, place in a cool oven for about 30 mins. until warm.
