Ingredients;
2 pts of beef or mutton stock.
8 Ounces Peeled Potatoes.
8 Ounces Carrots,
8 Ounces Swede.
4 Ounces Cabbage.
1 Large Onion.
8 Ounces Home Made Haggis.
Pepper and Salt to taste.
Serve with Parsley added.
Method.
Pour stock into large heavy bottomed pan. Dice all the
vegetables into small squares.
Chop Onion and Cabbage finely. Boil the mix until the vegetables
are tender. Pre-heat the Haggis and break into a crumbly state.
Pour the Haggis into the pan and stir until the broth comes up
to the boil again. This type of broth is prone to stick to the
pan base so be sure that you keep stirring. Turn the heat off
but do not put away your spirtle until the broth stops bubbling
and is several degrees cooler.
Note1 Additional
liquid may be needed to be added before the final boiling.

to taste. Serve garnished with finely chopped Parsley and serve
with traditional home made Oatcakes.
