Bread & Butter Pudding

Use a little of the butter to grease a shallow ovenproof dish, use the rest to butter the bread. Cut the bread into strips and arrange in the dish, buttered side up, in layers and sprinkle with sultanas and sugar, finish with a layer of bread. Heat the milk and cream to just about boiling point – do not boil, stir in the eggs, add the lemon rind,. Pour over the break, sprinkle with nut meg and leave to stand for 20 mins. Bake for 30-40 mins. until the custard is set and the top is crisp and golden. Serves 4. |
