Breakfast
Potato Patties
Ingredients:
4 rashers of Bacon (Diced)
1 small leek or onion (finely chopped)
1 cup chopped mushrooms
8 oz cold mashed potato
Pepper, garlic powder and a pinch of salt seasoning mixture
1 egg beaten
Extra eggs for poaching/frying
3 tablespoons fine oatmeal or cornmeal
Oil for frying
Grated Cheddar Cheese
Method:
Fry up the diced bacon then saute the leek or onion and
mushrooms in the bacon grease. Scoop out the onion and mushrooms
and set aside to cool. Add the mixture to the cold mashed
potatoes and add the seasoning. Mix together well and shape into
flat patties about 1/2 inch thick. Dip the patties in the beaten
egg and coat with oatmeal or cornmeal. Fry in hot oil until
lightly brown on each side. Top with a poached or fried egg and
top with grated cheese.
