This is a traditional dish for the Scottish Borders region, and it is a terrific way to use leftovers, especially after a meal of roasted meat and vegetables. To make if fresh, light saute shredded onions and cabbage in some butter. When the onions are transparent and the cabbage wilted, add in potatoes that have been mashed with butter and seasoning. Mix it all up, it doesn't hurt to have a bit of other veggies thrown in, either. Put it all in a greased baking dish, and top it with lots of shredded cheddar cheese. Bake it at 400F until the cheese is melted and turns golden brown. You can take a lot of liberty with this recipe, both in ingredients and quantities and it is fun to experiment with variations. You can add garlic, kale, leeks, mashed carrots or turnips, ham, or bacon.

This can be served right out of a saucepan with a sprinkle of cheese on each plate, and is called Bubble & Squeak by the English. Substitute the butter for cream and it is called Kailkenny. It is similar to the Irish Colcannon dish. Photo courtesy wikipedia
