Tomato
Basil Soup.
15 oz, Tomatoes, roughly chopped
1 Med. Onion – sliced
Bunch fresh basil
10 oz. Chicken Stock
½ oz. butter
Salt & Pepper.
Pinch sugar.
Melt the butter in a large pan and add the
sliced onion, allow to cook gently until soft.
Add tomatoes, sugar and basil, stir to coat with butter.
Cook gently, stirring occasionally, for about 10 mins.
When the tomatoes are completely soft add the stock and simmer for 3
mins.
Remove from the heat, liquidize and strain through a sieve, add
seasonings if necessary.
